The South Carolina Wildlife Federation (SCWF) kicks off the 2022 season of their popular Forks, Knives, and Spoonbills Conservation Dinner series in Aiken at The Willcox (100 Colleton Ave SW) on Thursday, January 27, 2022, from 6pm-8pm.
This intimate event features a five-course dinner with paired wines. Executive Chef Matt Sayer has created a special menu inspired by six imperiled bird species. Guests will learn details about each bird, their habitats, and the conservation efforts needed to help them thrive from SCWF’s Habitat Education Manager and renowned pro birder, Jay Keck, as each course is served in the historic Library Room at The Willcox. With its book-lined shelves, fireplace, and British country house feel, guests will enjoy a unique experience in a beautiful setting.
The menu and the species inspiring each course includes:
1st course: Red-headed Woodpecker
Black bean crisp, cotija cheese, spicy red pepper and tomato relish, micros
2nd course: Baltimore Oriole
Roasted heirloom carrot salad, cumin, coriander, orange citrus dressing, black sesame seeds, microgreens
3rd course: Bobolink
Poached Halibut, black quinoa pilaf, cauliflower bagna cauda
4th course: Eastern Towhee
Steak, poached white asparagus, black trumpet mushroom, jus
5th course: Scarlet Tanager
Black cocoa cake, strawberries, strawberry puree, strawberry cream
Red and white wines
